Cake love: an elegant tiered Victoria sponge with roses and strawberries

I simply love Victoria sponge cakes, perhaps even more than chocolate cakes – now that’s saying something!  I think it’s great that they’re making an appearance at wedding’s, and as tiered wedding cakes.

I had dreamt of making one for our wedding, I’d even bought three different sized cake tins, but had to admit half way through the week leading up to the wedding that I would just kill myself off if I tried to make a cake on top of everything else.

I’m determined to make a tiered Victoria sponge cake one day – watch this space!  This one above is very pretty with its roses and fresh strawberries, what I really like is the use of three different coloured roses – pink, red and white.  I think this cake is a bit too neat for my liking, I much prefer this more rustic homemade-looking one, but it doesn’t make this cake any less lovely.

Anyone having or had a tiered Victoria Sponge wedding cake?  Anyone who made it themselves?  Would love to hear if you have any tips for when I attempt to make one myself :0)

Gorgeous and yummy! I’ve admired cakes like this but with a Jan wedding strawberries would be tricky. There will def be a victoria sponge somewhere on our cake buffet though!

Hi Loveaudrey, perhaps you could make some homemade strawberry/raspberry jam this summer and put that into your Victoria sponge? I’m sure you could find some lovely flowers, or perhaps wild berries to decorate your cake for your January wedding? xXx
